Tofu Sesame Stir-Fry

Ingredients

  • 1 cup cauliflower

  • 1 cup broccoli

  • 1 onion

  • 3 carrots

  • 1 red capsicum

  • 1 bok choy

  • 1 cup mushrooms

  • 3 cups chopped cabbage

  • Extra-frim tofu 450g

  • 1 Tbsp. Olive Oil

  • 1 Tbsp. Sesame Seeds

  • 2 cups cooked long grain brown rice

  • coriander, avocado, salt & pepper – to serve 


Sauce

  • 2 Tbsp. Tamari/ Coconut Aminos

  • 2 Tbsp. Rice Wine Vinegar

  • 2 cloves garlic minced

  • 2 tsp. ginger grated 

  • 2 tsp. coriander

  • 2 tsp. chilli

  • 3 Tbsp. water


Directions

1. Heat olive oil in a saucepan on high

2. Whilst pan is eating, prepare all the vegetables & tofu

3. Add the onion into the heated pan, and saute

4. Mix in the diced tofu continuing to cook until golden brown

5. Sprinkle the sesame seeds over the tofu and continue to stir

6. Add all the vegetables & sauce ingredients, cooking until soft

7. Serve with ½ cup cooked brown rice, coriander, 1/4 avocado sliced, salt & pepper
